As a Moroccan native, Chef Assim developed a passion for Mediterranean and especially Italian cuisine. After receiving his Masters in Sociology he pursued his passion for food and entrepreneurship. He graduated from the Culinary Art School of Agadir in 2008, and after working at different restaurants in Morocco and traveling and cooking throughout the Mediterranean and Italy; Assim decided to move to the United States to fulfill his dream as a culinary creator.
His American experience started with the Darden Restaurant group at Capital Grill and Seasons 52. Shortly after, Chef Assim wanted to introduce his Mediterranean cuisine to luxury hotels in the DC area. The Ritz Carlton, in Pentagon City, seized the opportunity where he spent the next 3 years growing the menu’s influence in Georgetown and was able to meet and cook for countless celebrities and distinguished government officials. Chef Assim later moved with his wife to Dallas, Texas where he continued as the Chef for the Ritz Carlton Dallas. He continues to impress with his award winning and acclaimed American and Mediterranean infused dishes. He has been a champion of numerous competitions around the world and has won many awards representing himself and the organizations he has served.
